Marcus Kilvington

I’ve been in the food business for around 20 years. It all started when I worked for Knorr and Hellmanns and used to look after chefs in hotels, pubs, restaurants, cafes, delis and coffee shops. I love the food industry and enjoy nothing more than a great meal and then end up boring my friends talking about it for hours on end!
I’ve looked after all the major contract caterers in my time, along with leisure and travel, pubs and hotel groups and quick service restaurant chains.
Since working for Knorr and Hellmanns I’ve had spells at Tetley and Twinings (I do love a cup of tea!)
My passion is making a massive difference to the customer eating out experience.
My hobbies are water-skiing, going to the gym to keep fit, and Mindpower.
One of my favourite quotes is “My Success Helps Many People, my failure helps no-one”
My favourite food – a fillet steak (locally sourced) medium rare with a Drambuie cream sauce…hmmm!
4 people I’d invite to my dinner party – Albert Einstein (so I could travel backwards in time!) Carol Vorderman (I actually think she’s sexy!) Tom Cuise (a caring, genuine guy) Andy Mapple (the greatest water-skier ever in my opinion).

I’ve  been a Chef in the Hospitality business for 33 years. My first experience in food was  at the Intercontinental Hotel London where my journey began and since then
I have never looked back…it was too frightening too!
My experience is very wide and varied working in Restaurants, Hotels, Football clubs, Fine-Dining in peoples homes  (which is still my favourite part of my life), and even Caberet Venues (FAR TOO MANY LATE NIGHTS FOR ME!).

Something I was very proud of was being handpicked to accompany Prue Leith, (BBC2 Great British Menu), at The Royal Orchid Hotel, Bangkok, sister Hotel being the Hong Kong Manderin, where we cooked and promoted English food.
From this I was lucky enough to work at BBC Exhibitions, BBC Good Food show live and demonstrations. Even though achieving Rosettes, there is still nothing like the massive buzz and excitment in cooking and searching for that WOW experience for the customer.
I consulted and Coached for the CMi, an International Food Safety Company which included the, Food Standards Agency, Marstons, Scottish and Newcastle and many small to large food businesses.
My Hobby…is food!! My life is…food!!
Life is about progressing and my next step was University where I took a Diploma in teaching simply to pass on my knowledge and experience to other passionate people wanting to be the best of the best…yep…food again.
Now I don’t have a favourite food, however if anything, I so enjoy aromas of slow cooked foods…casseroles, braised meats, but with a good creamy mashed Potato.
4 people for my dinner party would be – Stephen Fry (how could anyone be bored with him around), Auguste Escoffier (the most influential cook of any time),
Mozart, because I need to ask him “How did he create such beauty with so many notes”? Lastly, the one single person who invented the ladle?
Ideas don’t have to be earth shattering, just simple, a bowl on the end of a stick…! Fantastic!
